200g minced short rib
400g minced chuck
200g minced brisket
Salt and pepper for seasoning
8 slices Monterey Jack cheese
4 burger buns
Lettuce, tomato, gherkins, coleslaw
 
Mix the different minced cuts of beef together with your hands, adding the fat a little at a time making sure you do not overmix it.
Divide the mixture into 4 and roll each portion into a ball or ruler. Press the balls down gently with your hands to form 4 or 5 patties.
Leave the burgers at room temperature for about 10 minutes before cooking them.
Season the burgers on both sides with plenty of salt and pepper.
Pan fry in hot vegetable oil or barbecue for 2 minutes on each side for medium or 5 minutes for well done.
Place two slices of Monterey Jack cheese on top of each burger and put under a hot grill to melt or ather.
Serve immediately.
TIP: The secret to our burger is the combination of different cuts of beef and the minced beef running through the mix. Ask your butcher to mince them for you or invest in a mincer for a lifetime of great burgers! Be creative when it comes to garnishing your burger – try coleslaw, slices of beetroot, remoulade or avocado.

    visited carriages on fri 16/2/13 with my other half and ordered the valentines menu which was still on offer.starter was a platter of shellfish - oyster etc.plenty there and excellent. main course was a platter of meat - excellent. sweet was a pavlova - again excellent.you know, i can never fault this place, from the pizzas to the cooked food, the chef(s) are fantastic at their job and the staff, off course, outstanding.oh yes, nearly forgot, a free glass of bubbly was included too. cheers.

    was travelling to the boat at larne harbour after visiting relatives in carnlough and as i was a bit early for the sailing decided to call in somewhere for a bite to eat.came across carriages by chance and although was busy, was seated straight away in one of the themed train carriage booths.there was a warm atmosphere in the place and the food menu and drinks order was taken immediately.the waitress, who i may add, was very cheerful and polite, returned shortly after with my drink and took my order.i ordered one of their 9 inch pizzas accompanied by a side of chips which arrived in 20 mins or thereabouts.both pizza and chips were beautiful and i would say that they would be among the best i have ever tasted.too full for a sweet, so finished my drink and headed to the harbour. highly recommended.
